  • Margaritas, Gaby and I are all BFFL

    Have you ever been best friends with someone you have never met? It happens to me all the time. And, if you hang around me in person, you are used to me talking about all my best friends. I am sure it was confusing to start with, but everyone has gotten used to it. Gaby Dalkin and I are best friends. Seriously it doesn’t matter... stop judging me. Moving on...because Gaby and I are such good friends its obvious we both love Margaritas. I don’t think I have ever met a margarita I don’t like. But as I get older, I am really starting to appreciate the “Skinny Margs.” My teeth are less furry while drinking them, I don’t get a sugar high followed by hang over and they are so freaking fresh.   • Low Carb Bagels

    Bread. It's delicious. But I don't always feel the best when I eat something full of carbs. It is not diet culture that is steering me towards these low carb bagels, it's the way my body and mind feels after eating them. Remember, eat what makes you feel good... you will probably read that a million times over here. Anyway... Ingredients 1 1/2 cup shredded mozzarella cheese 2 ounces cream cheese, cut into pieces 1 large egg 1 1/4 cup almond flour 1 tablespoon baking powder (or 1 teaspoon of baking soda) Optional toppings: everything bagel seasoning, shredded cheddar cheese and jalapeños, the options are endless. Directions: Melt together the mozzarella cheese and cream cheese. I did 20 second increments in the microwave until it was well melted - but not too hot. Add the egg (you don't want it to cook, which is why it's important you don't have super hot cheese). Mix together and add in almond flour and baking powder. If needed, you can microwave again to help flour incorporate. The dough will be sticky - that's ok! Divide dough into four balls. Flatten the balls and poke a hole into the middle. I found it best to cook on parchment paper. Top with whatever you want (or nothing). Bake at 350 until lightly browned (12 -15 minutes). Use in place of bagels (think breakfast), bread (think sandwich) and buns (think burger). Pro tip: They stay best in the fridge for a few days. Can easily be frozen and thawed individually!

  • Non-Stuffed Italian Stuffed Celery

    So you have probably gathered that the celery is supposed to be stuffed - think ants on a log. But through trial and error I’ve decided that for starters, no one has time to stuff the celery and two, it’s way too messy. And really, dipping is where it’s at anyway. This recipe - if you can even call it that - is the perfect light, crunchy refreshing thing to kick of spring and carry into summer. Ingredients 1 (8 oz) block of cream cheese 1 (.07 oz) package of Italian dressing 1/2 cup mayo 1 cup shredded mozzarella cheese Celery, washed and cut Dash of paprika for the top if you're feeling fancy. Directions: Mix together... slap into a bowl and get dipping.

  • Imperfect Foods

    Every Thursday at noon is like Christmas Eve for me. Why? Because that's the time I can start selecting my imperfect food items. While I am not really a creature of habit, I always select our staples... carrots, potatoes, broccoli, you know. But then, I get to be wild and select things that I don't generally see in the store, like the delicious Chipotle Turkey Tenderloins. Perfect for grilling season. Cauliflower Mac and Cheese. And oh, so many more things. After all the selections are made, when Tuesday rolls around, it’s like Christmas Morning. It's imperfect delivery day!
