Is there anything better than a new recipoe? That's a no for me. I love making new things! I made this for Lyncoln's Birthday party and it was delicious. I tripled the recipe below thinking it wouldn't be enough, welp - it was a lot! So only double or triple if you're serious about feeding some people! Check the tip out at the bottom to keep this easy weeknight dish fresh for delicious left overs!
Ingredients:
1 (15 oz) can of whole kernel corn, drained
1 small red pepper, diced
1 Cup of Shredded Cheese, I used Colby but go with what you like or even better - whatever you have!
1/2 Cup of Mayo
Half of a Bag (9.oz) Chili Cheese Fritos, lightly crushed
1 tsp Salt
1 tsp Pepper
1 tsp onion powder
1/2 T. dried Cilantro, if it's fresh chopped some for garnish
1 -2 gloves of garlic, crushed.
Directions:
Mix everything but the fritos together. This is a perfect thing to make in advacned. When you're ready to serve toss with Chili Cheese Fritos. This is good the day of. The next day the chips will be soggy. Still edible, but not as delicious.
Tip: If you're making this on a weeknight, and you're hoping for some left overs - skip mixing the fritos in. Instead, let everyone top their portion with some. This will allow you to keep the left overs longer!
