Cucumber Avocado Salad

Yet another Clean Food Crush recipe for the Win. And, an even bigger win... McKinley and Dakota liked it!


Ingredients:

2 medium English cucumbers, seeded and sliced (I used one)

3 ripe avocados, peeled, pitted and chopped (I used two)

2 tablespoons capers, drained

2 heaping tablespoons fresh cilantro leaves, chopped

2 heaping tablespoons fresh parsley leaved, chopped

2 heaping tablespoons of fresh chives, finely sliced (I used dried as grocery store was out of chives, worked perfectly)

1 fresh garlic clove, finely grated or minced (I used two, you can never have enough garlic)

2 small fresh limes, juiced

1 tablespoon extra virgin olive oil

sea salt and black pepper to taste


What do to:

Seriously? Chop it all accordingly and mix together carefully.


My left overs are going on day three and still looks great (thanks to the lime juice).
